I would love it if calls made to the services I create using the WebDev Module would show up in the Audit Log

You can make this happen now using system.util.audit.

Thanks,I will try to use this for all my web services but would be nice if there was a property on the gateway to automatically log all calls to Ignition create web services. Audit log is really helpful for a number of reasons, one for me is to know what/how much of what we develop is being used.
